Welsh Rarebit is a delicious, cheesy, twist on toast. Parents and kids alike will love this!

Welsh Rarebit


  • One half pound cheddar cheese (cut into small cubes)
  • 1 Tbsp butter
  • One half tsp. dry mustard
  • Dash or two or cayenne pepper
  • 1 egg beaten
  • Salt and pepper to taste
  • One half cup of beer
  • Wheat toast


  • Melt cheese and butter slowly over low heat
  • Stir constantly until mixture is liquefied
  • Add dry mustard and pepper and stir
  • Add egg, salt and pepper and beer to cheese
  • Continue to stir until egg is cooked but do not let it boil
  • The mixture will become smooth and creamy
  • Spoon over sliced wheat toast


Use low fat cheese and your favorite egg substitute
