Chocolate Fudge Cake

This cake is rich, decadent, and loaded with different forms of chocolate. Great to try out at home as a birthday or celebration-type cake for someone you know who loves chocolate.

Ingredients

  • 2 cups all-purpose flour
  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • ½ tsp kosher salt
  • 2 cups white granulated sugar
  • 1 cup vegetable oil
  • ¾ cup cocoa powder
  • 1 tsp vanilla extract
  • 4 whole eggs
  • 1 cup buttermilk
  • 3 Tbsp mayonnaise
  • 1 cup semi-sweet chocolate chips
  • 1 cup walnuts, (chopped)
  • ½ cup pecans, (chopped)
  • 1-1.5 cups chocolate frosting
  • 1 bar of dark chocolate, (for use to make chocolate shavings, as garnish)

Instructions 

  • Preheat oven to 350F.
  • Grease and flour a 9x13 inch baking dish.
  • In a medium-sized bowl, sift together the flour, baking powder, baking soda, and salt.
  • In a large bowl, whisk together the sugar and oil until light and fluffy.
  • Whisk in the cocoa powder until combined.
  • Beat in the eggs one at a time, and then stir in the vanilla.
  • Add the buttermilk and mayonnaise, and stir with a whisk until fully combined.
  • Add the flour mixture you combined earlier to the wet mixture, until the batter is evenly mixed.
  • Stir in the chocolate chips, and walnuts and pecans.
  • Pour the cake batter into the prepared pan.
  • Bake in the oven at 350F for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Cool in the pan for 30 minutes, and then turn out onto a wire rack and allow to cool completely.
  • Spread the chocolate frosting over the chocolate cake.
  • Sprinkle the chocolate shavings over the top of the cake.
  • Cut cake into slices, and serve with cold glasses of milk.

Notes

This cake tastes great a few days after it is made.
You can always make your own chocolate frosting from scratch if you prefer. The above is designed to save some time, and uses storebought frosting.
A cream cheese frosting here would also be nice to cover the chocolate cake, if you want a chocolate cake with cream cheese frosting. Try combining 1 package of softened cream cheese with 1 stick of softened salted butter and 3.5 cups of confectioner’s sugar and 1 tsp of vanilla extract in a stand mixer until fully whipped.
