Pumpkin-Spiced Whiskey Cocktail

Ingredients

To make the Pumpkin-Spiced Simple Syrup:

  • ¼ cup white granulated sugar
  • ¼ cup water
  • 1 thumb-sized piece of raw ginger, (smashed with the back of a knife)
  • ¼ tsp pumpkin pie spice

For the Remaining Cocktail Ingredients:

  • 4 oz whiskey or bourbon of choice
  • 2 oz pumpkin-spiced simple syrup that was made earlier
  • 6 oz apple cider
  • 1 oz freshly-squeezed lime juice
  • 2 dashes of Angostura bitters
  • 1 Honeycrisp apple slices, (finely sliced, as garnish)
  • A sprinkle of pumpkin pie spice, (as garnish)

Instructions 

To make the Pumpkin-Spiced Simple Syrup:

  • Add the white granulated sugar and water and smashed fresh ginger to a saucepan over medium heat.
  • Stir until the sugar has dissolved.
  • Add ¼ teaspoon of pumpkin pie spice, and turn the heat to low.
  • Let the mixture simmer for about 5 minutes on low heat.
  • Remove the smashed ginger from the mix.

To Assemble the Cocktail:

  • Fill a shaker with ice cubes.
  • Add the whiskey or bourbon, 2oz of the pumpkin-spiced simple syrup that you made earlier, lime juice, apple cider, and bitters.
  • Shake well.
  • Strain the mixture into rocks glasses filled with ice.
  • Garnish with the thin apple slices and a sprinkle of pumpkin pie spice.
