Scrambled Eggs with Salmon Roe, Crème Fraiche, Potato Chips & Chives

This is the kind of special breakfast you serve to someone special in your life who loves food. It is surprisingly easy to put together, once you have the ingredients collected. The recipe below is designed for two people.

Ingredients

  • ½ cup crème fraiche
  • 20 unbroken potato chips
  • 2 oz salmon roe
  • 3 Tbsp fresh chives, (very finely sliced)
  • 5 whole eggs, (beaten)
  • 1 tsp water
  • 2 Tbsp salted cold butter, (cut into small pieces)
  • ¼ tsp kosher salt
  • Freshly-ground black pepper

Instructions 

  • Place the crème fraiche into a small piping bag or small ziplock bag.
  • Pipe small dollops of crème fraiche onto the individual potato chips, followed by small scoops of salmon roe.
  • These prepared potato chips will be placed amidst the scrambled eggs once they are done cooking.
  • Beat your whole eggs together with a fork and set aside.
  • Place the 1 tsp water in your nonstick saute pan for cooking eggs.
  • Once the water is simmering, add the butter and wait for 15 seconds.
  • Add the beaten eggs and reduce heat to low.
  • Once the eggs have begun to coagulate, gently stir the eggs off the bottom of the pan with a rubber spatula and allow them to continue cooking.
  • Stir in 1 Tbsp of the crème fraiche into the eggs.
  • Taking care not to overcook, remove the eggs from the pan and place onto serving plates.
  • Quickly arrange the prepare potato chips throughout the eggs on each plate.
  • Use any remaining salmon roe and scatter throughout the eggs.
  • Garnish with freshly-ground black pepper and a generous sprinkling of finely-sliced chives.

Notes

The dish is best served and eaten immediately.
