Pumpkin-Spiced Whiskey Cocktail
As the nights grow longer and the darkness creeps in, curl up next to the fire with this pumpkin-spiced whiskey cocktail. This cocktail recipe below makes two cocktails, with extra pumpkin-spiced simple syrup leftover.
Ingredients
To make the Pumpkin-Spiced Simple Syrup:
- ¼ cup white granulated sugar
- ¼ cup water
- 1 thumb-sized piece of raw ginger, (smashed with the back of a knife)
- ¼ tsp pumpkin pie spice
For the Remaining Cocktail Ingredients:
- 4 oz whiskey or bourbon of choice
- 2 oz pumpkin-spiced simple syrup that was made earlier
- 6 oz apple cider
- 1 oz freshly-squeezed lime juice
- 2 dashes of Angostura bitters
- 1 Honeycrisp apple slices, (finely sliced, as garnish)
- A sprinkle of pumpkin pie spice, (as garnish)
Instructions
To make the Pumpkin-Spiced Simple Syrup:
- Add the white granulated sugar and water and smashed fresh ginger to a saucepan over medium heat.
- Stir until the sugar has dissolved.
- Add ¼ teaspoon of pumpkin pie spice, and turn the heat to low.
- Let the mixture simmer for about 5 minutes on low heat.
- Remove the smashed ginger from the mix.
To Assemble the Cocktail:
- Fill a shaker with ice cubes.
- Add the whiskey or bourbon, 2oz of the pumpkin-spiced simple syrup that you made earlier, lime juice, apple cider, and bitters.
- Shake well.
- Strain the mixture into rocks glasses filled with ice.
- Garnish with the thin apple slices and a sprinkle of pumpkin pie spice.
