Butterscotch Oatmeal Squares

Ingredients

  • 1 cup all-purpose flour
  • 2 cups cinnamon graham cracker crumbs
  • 1 cup quick cooking oats
  • Two thirds cup brown sugar
  • Two thirds cup granulated sugar
  • 2 tsp. baking powder
  • 3 eggs
  • One quarter cup oil
  • 2 tsp. vanilla

Instructions 

  • Combine all dry ingredients in a large bowl and mix well.
  • Beat eggs and add vegetable oil and vanilla.
  • Add egg mixture to dry mixture and mix well.
  • Pour into a greased 13 x 9-inch baking dish.
  • Bake for 30 - 35 minutes at 350 degrees or until toothpick comes out clean when stuck in the middle of batter.
  • Allow to cool completely before cutting into squares.

Notes

You can also substitute an equal measure of apple sauce for the oil.
