When I first read about the famous Fool’s Gold sandwich that was admired by Elvis, I was completely captivated by the idea.
The original classic loved by Elvis was an absolute monster of a sandwich—It included an entire loaf of bread, which was partially hollowed out and filled with a jar of peanut butter, a jar of grape jelly, and 16 ounces of fried bacon. It is estimated to clock in at roughly 8000 calories, which is a little bit crazy for a sandwich, even if you are sharing it with a few other people.
My version of this recipe described below is smaller, and more manageable to eat, with many of the same flavors as the original. I have included some cream cheese and banana to the sandwich, both of which are optional.
The recipe below is for 2 sandwiches.
