Ingredients

  • 2 English Cucumbers or4-5 baby cucumbers
  • ½ red onion
  • ½ cup white vinegar
  • ½ cup sugar
  • 4 Tbs fresh dill
  • 1 Tbs celery seed
  • 1 Tbs mustard seed
  • Salt & pepper

Instructions 

  • Peel the cucumbers.
  • Slice into thin pieces.
  • Peel and slice onion, likewise thin.
  • Put everything into a large mixing bowl and toss.
  • Place a plate on top of the mixture to keep it covered.
  • Marinate the pickles overnight in the refrigerator
  • Stir, adding salt & pepper to taste
  • Serve

Notes

If you like your cucumbers thicker, just give them more time to marinate. If you have a mandolin, it’s the ideal tool for slicing up the cucumber and onions evenly.
