Cured Egg Yolks, the Perfect Addition to Pasta & Salads
In this recipe, the egg yolks are simply cured in a salt and sugar mix. Once cured, the eggs are perfect when served in pastas and salads.
Ingredients
- 2 cups salt
- 1.5 cup white granulated sugar
- 4 egg yolks
Instructions
- Mix the salt & sugar.
- Pour 2/3 of the mixture into a small glass dish.
- Make four small indentations in the salt to serve as landing pads for the egg yolks.
- Separate the egg yolks, and place each one into an indentation in the sugar and salt mix.
- Cover the tops of the egg yolks carefully with the remaining sugar & salt mix.
- Cover with plastic wrap and allow to sit for 4 days.
- After four days, rinse the egg yolks off with water.
- Lightly oil a wire rack with vegetable oil and place egg yolks on wire rack.
- Place in a 145F oven for 90 minutes, or until the yolks are slightly soft.
- Turn off oven and allow to cool in the oven for another 30 minutes.
- Grate cured egg yolks over pasta, soups, or salads.
Notes
There are other recipes that involve wrapping the egg yolks in cheesecloth the dry out after they have been cured in the salt & sugar mix, which works great. This recipe is a bit less fussy.
