With the cooler weather coming, meatloaf is the perfect dinner.

Stuffed Meat Loaf

Ingredients

  • 1 and one third cups water
  • One third cup milk
  • 2 Tbsp. butter
  • 1 tsp. salt
  • 1 and one third cups mashed potato flakes
  • 1 egg beaten
  • One third cup quick-cooking oats
  • One half cup celery, diced
  • One third cup onion, diced
  • One half tsp. pepper
  • 1 pound ground beef
  • 1 cup cheddar cheese, shredded
  • One quarter cup ketchup

Instructions 

  • In a saucepan, combine water, milk, butter and salt and bring to a boil, then stir in mashed potato flakes and set aside
  • In a large bowl, combine egg, oats, celery, onion and pepper and mix, then add ground beef and mix well
  • Place beef mixture on a piece of wax paper and spread out to form a rectangle
  • Spread mashed potatoes over beef and sprinkle with cheese
  • Roll up and secure the seam
  • Place seam side up in a greased 13 x 9-inch baking dish
  • Bake at 350 degrees for 30 minutes, pour ketchup over the top and cook another 20 minutes or until meat is fully cooked

Notes

  1. We made this the other day and it was just great.
  2. Use your favorite egg substitute and the leanest ground beef you can find.
