Ok, it sounds odd, but think of all the different components that have gone into pizza over the years, including using cauliflower for the crust! This recipe comes from that concept.
Here, the instructions call for an air fryer. You can make these in the oven, but they won’t have bits of crispiness that add to the overall mouthfeel.
Pizza Mashed Potatoes

Ingredients
“CRUST” FOR ONE
- ½ c. Italian bread crumbs
- 1 tbsp butter
- 1 cup leftover mashed potatoes
- Spices to taste.
Instructions
- Take a small piece of parchment that will fit comfortably in the air fryer,
- Melt the butter, and slowly stir in the bread crumbs so they are well coated.
- Sprinkle the breadcrumbs onto the parchment so they form a circle about 5” in diameter.
- If you want more seasoning in your potatoes, add it now. Think of herbs and spices that will complement your toppings.
- Take small spoonfuls and pat them onto the breadcrumbs. Use your fingers so the potatoes don’t stick to the spoon.
** Possible herb blends for your potatoes include
- Lemon zest, garlic powder, and smoked paprika for a shrimp pizza.
- Ginger, smoked salt, minced fresh garlic, a pinch of chili powder, and powdered coconut for Hawaiian pizza
- Smoked paprika, cracked black pepper, oregano, basil, and onion powder for barbecue chicken pizza
- Chopped olive, crumbled bacon, chopped spinach, and feta cheese for Greek-style pizza.
- Sour cream, dill, finely minced onion, grated carrot, and ranch seasoning mix for vegetable pizza
TOPPING YOUR CRUST
- If you thought creating spice blends for the potatoes was fun, toppings are similarly creative. You can go a traditional route by brushing pizza sauce on the crust, followed by shredded mozzarella cheese and pepperoni bits. Or, try something different.
- You don’t need any sauce. Just load up the potato with onions, green pepper, bacon bits, and cheddar cheese, for example. Then too, consider

Mushroom, Asparagus
Eggplant, Broccoli
Sausage, fried peppers, fried onions
Basil, cherry tomato, goat cheese
COOKING INSTRUCTIONS
- Place the parchment with your pizza gently into the air fryer.
- Cook on air fry for 7 minutes
- Change the setting to broil for 3-4 minutes (check to see if you’re happy with the crispness)
- Remove and serve!
Notes
You can make these in advance. Freeze each on a sheet pan separately. Wrap and store.
If you make yours in the oven, you can do a full-sheet pizza using a cake pan.
