Chia Seed Banana Pudding

This dessert recipe is easy to make, healthy, and delicious!

Ingredients

  • ½ cup chia seeds
  • 3 overripe bananas, (mashed into a paste)
  • 2 cups coconut milk
  • 3 Tbsp maple syrup
  • 1 tsp vanilla extract
  • ¼ cup toasted coconut flakes, (optional, as garnish)

Instructions 

  • Combine chia seeds with mashed bananas, coconut milk, maple syrup, and vanilla extract.
  • Stir and allow to rest in the fridge for 20 minutes.
  • After the mixture has rested for another 20 minutes, stir the contents again and place back in fridge.
  • After the mixture has rested for an additional 20 minutes, stir a final time and allow the mixture to set in place in the fridge overnight.
  • Serve with toasted coconut flakes, if desired.

Notes

This dessert stores well in the fridge for several days.
