Homemade Summer Limoncello
There are few things finer than sipping ice-cold limoncello by the side of a pool. It is surprising easy to make at home, and serves as an amazing gift to friends or family.
Ingredients
- 1 L bottle of 100 proof vodka
- 10 organic lemons ((without wax))
- 2 sprigs thyme
- 1.5 cups water
- 1.5 cups sugar
- Lemon wedges, (as garnish)
Instructions
- Use a microplane to remove the very outer yellow zest from the lemons, avoiding any of the white pith.
- Mix the lemon zest and thyme with the vodka and stir to combine.
- Reserve in the fridge for 2 weeks, shaking the vodka every day.
- Combine 1.5 cups water with 1.5 cups sugar and bring to a simmer.
- Stir until all of the sugar is dissolved.
- Remove from heat and allow simple syrup mixture to cool at room temperature.
- Strain the thyme and lemon zest from the vodka.
- Mix infused vodka with the simple syrup and chill.
- Serve ice cold, with a wedge of lemon as garnish.
Notes
This limoncello can be stored in the fridge or the freezer for a long period of time.
