Making your own Chai spice mix at home is easy, once you have gathered the required ingredients. The dry Chai spice mix used here includes ground cardamom, ground allspice, ground cloves, ground cinnamon, ground ginger, and ground nutmeg.

The oatmeal recipe below includes old fashioned rolled oats, which require less cooking time compared to steel cut oats.

Some chopped apple, Chai spice, and brown sugar are added while the oatmeal is cooking, and some fresh apple is added on top of the oatmeal at the end. The final flavors are really wonderful.

The recipe below is intended for one large serving.

Chai-Spiced Oatmeal with Apples

Making your own Chai spice mix at home is easy, once you have gathered the required ingredients. The dry Chai spice mix used here includes ground cardamom, ground allspice, ground cloves, ground cinnamon, ground ginger, and ground nutmeg.

Ingredients

For the Chai Spice Mix:

  • *This recipe will make more Chai Spice Mix than you will need for the recipe.
  • 1 tsp ground cardamom
  • ½ tsp ground allspice
  • ½ tsp ground cloves
  • 2 tsp ground cinnamon
  • 2 tsp ground ginger
  • ½ tsp ground nutmeg

For the Remaining Oatmeal Components:

  • 1 cup whole milk
  • ½ cup old fashioned rolled oats
  • ½ tsp Chai spice mix (that you made earlier)
  • ¼ tsp kosher salt
  • 1 Tbsp brown sugar
  • 1 apple (peeled, core removed, & cut into ¼” pieces)
  • *Cook half of the apple with the oatmeal, save remainder as a garnish.
  • 1 Tbsp salted butter

Instructions 

For the Chai Spice Mix:

  • In a small bowl, whisk together the ground cardamom, ground allspice, ground cloves, ground cinnamon, ground ginger, and ground nutmeg until evenly combined.
  • Store the Chai spice mixture in an airtight container for later.
  • *Note, if you want an even fresher and more intensely aromatic Chai spice mixture, buy all of the required Chai spices individually, but purchase them as whole spices, rather than their ground versions.
  • Toast each of the whole spices individually in a dry saute pan over medium heat and allow to cool.
  • Grind the spices using a spice grinder and store in an airtight container.
  • This whole-spice approach works wonderfully for making spice mixtures like Garam Masala.

For the Remaining Oatmeal Components:

  • Bring 1 cup of whole milk to a simmer on the stove in a small pot.
  • Add the rolled oats, ½ tsp of the Chai spice mixture, ¼ tsp kosher salt, and 1 Tbsp brown sugar, and stir to combine.
  • Add ½ of the peeled chopped apple.
  • Cook the rolled oats until they are soft and fully cooked, or about 8-10 minutes.
  • Stir in the salted butter.
  • Serve hot, topped with the remaining fresh apple, with a cup of hot homemade Chai tea made using some of your fresh Chai mix!

Notes

Store any leftover dry Chai spice mix in an airtight container for whenever you want to use it.
