Prosciutto Caprese Skewers

This is the perfect finger-food item to serve up at a family gathering or BBQ as an appetizer.

Ingredients

  • 24 mini mozzarella cheese balls
  • 12 slices prosciutto, sliced very thin
  • 36 whole grape tomatoes
  • 2 Tbsp extra virgin olive oil
  • ¼ tsp dried oregano
  • Salt & freshly-ground black pepper (to taste)
  • 36 basil leaves (roughly-torn into stamp-sized 1x1” pieces)
  • 12 skewers (6” long)
  • 2 Tbsp balsamic glaze

Instructions 

  • Cut each slice of prosciutto in half.
  • Wrap each mozzarella cheese ball in half a slice of prosciutto and set the prosciutto-wrapped mozzarella balls aside.
  • Toss the grape tomatoes in a bowl with the olive oil, a pinch of dried oregano, salt, and freshly-ground black pepper.
  • Assemble the skewers with 3 tomatoes and 2 mozzarella balls on each skewer, alternating between tomatoes and mozzarella balls.
  • In between the tomatoes and mozzarella balls, add a few torn pieces of basil.
  • Arrange skewers on a platter.
  • Drizzle lightly with the balsamic reduction, add a sprinkle of black pepper, and finish with a splash of extra virgin olive oil.
  • Serve at room temperature, with napkins.

Notes

If you can’t find store-bought balsamic glaze, you can create your own at home with 1 cup of balsamic vinegar. Carefully cook the balsamic vinegar and reduce it down on the stove until it arrives at a syrupy consistency.
