Crostini with Morcilla, Goat Cheese, Walnuts and Honey
If you can get your hands on a soft link of blood sausage from a vendor your trust, try serving it on toasted crostini with goat cheese and a drizzle of honey!
Ingredients
- 1 small loaf of French bread
- 2 Tbsp extra-virgin olive oil
- 1 link soft morcilla or blood sausage
- 6 oz log of goat cheese, (cut into thin rounds and softened at room temperature)
- 2/3 cup walnuts, toasted and roughly chopped
- 3 Tbsp honey
- 2 Tbsp fresh chives, finely sliced
- Freshly-ground black pepper, as garnish
Instructions
- Remove contents from link of blood sausage and place into nonstick pan.
- Gently heat contents until hot, stirring to avoid any sticking.
- When blood sausage is hot throughout, turn off heat.
- Cut bread at an angle into oval-shaped slices 3/8” thick.
- Drizzle slices with olive oil and toast in the oven at 375F on a sheet tray for 5 minutes, or until bread is warmed through and the exterior of each slice is gently crispy.
- Remove bread from oven.
- Spread a thin layer of blood sausage on top of each baked slice of bread.
- Add thin rounds of soft goat cheese on top of the blood sausage.
- Add walnuts on top of the goat cheese and blood sausage.
- Drizzle lightly with honey.
- Garnish with freshly sliced chives.
- Serve warm.
