Cheese-stuffed mushrooms are the perfect appetizer for any party or holiday!
Cheese-Stuffed Mushrooms
Ingredients
- 18 - 24 large mushroom caps
- 1 cup ricotta cheese
- One quarter cup fresh parsley, finely chopped
- 1 Tbsp. fresh lemon juice
- Salt and pepper to taste
- 1 cup mozzarella cheese, shredded
Instructions
- Combine all ingredients, except mozzarella cheese, and mix well
- Fill each mushroom cap with an equal amount of the mixture
- Place mushrooms on a baking pan and bake at 400 degrees for about 15 minutes
- Remove from oven and sprinkle with mozzarella cheese
- Return to the oven long enough for cheese to melt
- Serve warm
