If you are headed out for a tailgate party or perhaps hosting a gathering at home, it’s nice to have a flavor-packed simple dish. It’s even better when the morsel is portable!

You do not have to marry yourself to all the ingredients in this dish. You could use cheddar cheese instead of Havarti, for example. Or, use sliced ham instead of bacon. The key to success is making sure whatever you put in the middle isn’t so thick that you can’t twist the pastry around it.

Bacon Twists with Dip

Ingredients

TWIST

  • 2 sheets of puff pastry
  • 1/2 cup Havarti
  • 1 lb smoked bacon
  • 1 egg ( lightly whisked)
  • Sesame seeds

DIP

  • 1 cup shredded Havarti cheese
  • 1 cup shredded whole milk mozzarella cheese
  • 1 cup cream cheese
  • 1/2 teaspoon stone ground mustard
  • 1/2 teaspoon garlic salt
  • 1 cup pale ale
  • 2 tbsp freshly chopped parsley
  • 1/2 tsp dried chili flakes

Instructions 

  • Set the oven to 400F.
  • Get out two sheet pans and line them with parchment paper (this keeps the twists from sticking)
  • Unroll one sheet. Turn the pan, so the wide end faces you. Sprinkle the surface with ¼ cup of the Havarti.
  • Lay down one slice of bacon side-by-side, nearly touching.
  • Slice between the bacon for long strips
  • Twist the pastry strips all the way up
  • Repeat with the second pastry sheet
  • Put the twists on the trays with space between each allowing for expansion.
  • Using a pastry brush apply the egg and sprinkle sesame seeds on top.
  • Cook for about 20 minutes until the bacon crisps, and the pastry is golden-brown.
  • While the twists cook, prepare your dip.
  • Keeping out the pale ale, put all your ingredients into a saucepan.
  • Heat the blend over medium heat until everything melts.
  • Add in the beer
  • Simmer for 5 minutes
  • Place in a dipping bowl garnished with parsley and chili.
