Ginger-Garlic Marinated Beef Skewers

These marinated beef skewers taste amazing when grilled quickly over high heat on a charcoal grill. If you don’t have access to a charcoal grill, just go ahead and use a regular gas grill—the flavor of the beef skewers will still be wonderful.

Ingredients

  • 16 wooden skewers, soaked in cold water for at least 2 hours
  • 24 oz ribeye or sirloin steaks, cut into thin ¼” strips
  • 1 tsp kosher salt
  • 6 cloves garlic, finely minced
  • 1 thumb-sized piece of raw ginger, peeled and finely minced
  • 2 Tbsp red pepper flakes
  • Zest of 1 lime
  • Juice of 1 lime
  • 1 Tbsp rice wine vinegar
  • 2 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • 1 Tbsp honey
  • 1 tsp fish sauce
  • ¼ cup vegetable oil

Instructions

  • Submerge and soak the wooden skewers in cold water for at least 2 hours.
  • Cut the steak into thin strips, a bit smaller than ¼”.
  • Gently salt the beef strips with a very light sprinkling of kosher salt.
  • In a separate bowl, prepare the beef marinade.
  • For the beef marinade, combine the finely-minced garlic cloves and ginger with the red pepper flakes, lime zest and juice, rice wine vinegar, soy sauce, sesame oil, honey, fish sauce, and vegetable oil.
  • Whisk the marinade ingredients together to fully combine.
  • Combine the sliced beef with the marinade and allow the marinating beef slices to sit in the fridge in a Ziplock bag for roughly 4 hours.
  • After the beef slices have marinated and the wooden skewers have soaked, carefully thread the slices of marinated beef onto the skewers.
  • When you are ready to cook the beef skewers, prepare your charcoal grill and allow the grill to get hot.
  • When the charcoal embers have formed and the grill is hot, quickly grill your beef for a minute or so on each side, or until the beef is cooked to medium-rare (or however you like your beef cooked).
  • Allow the skewers to rest for 30 seconds and serve while the the beef is still hot.

Notes

Because the beef here is sliced relatively thin before it is marinated, the beef doesn’t need an entire day to sit in the marinade—it only takes a few hours. If you prefer to marinate your beef overnight for a longer period of time, try marinating the entire piece of beef, unsliced, and store it in the fridge in an airtight Ziplock bag.
