Ingredients

Meatballs

  • 1 lb ground lamb
  • 1 cup seasoned breadcrumbs
  • 1 large egg
  • 1/4 cup chopped red onions
  • 1/4 cup fresh dill, minced
  • 1/4 cup parsley, minced
  • Salt and pepper to taste

Feta infused yogurt

  • 5 oz whole milk feta
  • 1 cup plain, whole milk Greek-style yogurt
  • 3 sliced of lemon
  • ½ cup fresh herbs (dill, oregano, basil, parsley, bay, thyme)
  • 1 clove garlic, minced
  • ¼ cup whipping cream (** One tablespoon of fresh herbs equals 1 teaspoon of dry herbs. )

Cucumber-Dill Salad

  • 3 cups seedless cucumbers sliced thinly
  • 4 Tbs dill (or more to taste)
  • ½ cup sliced red onion
  • 2 Tbs fresh squeezed lemon juice
  • 1 Tbs Extra virgin olive oil
  • 1 Tbp orange blossom honey
  • ½ cup white vinegar
  • ½ tbs celery seed
  • Salt & Pepper (** You can adjust the amount of honey/vinegar for personal tastes)

Instructions 

  • Preheat your oven to 425F
  • Line a baking sheet with parchment paper
  • Put all the meatball ingredients in a bowl and mix them thoroughly
  • Shape your meatballs into the size of a golf ball. If they seem too dry, you can add a hint of milk
  • Place the meatballs on the baking sheet
  • Cook for 16 minutes (the meatballs are brown, and the meat’s temperature is 160F)
  • Time to multitask. As the meatballs cook, create your yogurt. Put the ingredients for the Feta yogurt into a food processor or blender. On a medium setting, mix for about 3 minutes until smooth.
  • Put all the ingredients for the cucumber salad in a mixing bowl, give them a good stir, and set aside.
  • When your meatballs come out of the oven, put a portion of yogurt on each plate. Top the yogurt with the meatballs. Place the salad on the side.
