Have you grown tired of the same-old meatball recipe? Shake things up a bit and try lamb meatballs. They’re delicious and juicy.If you’ve never had lamb before, you’re in for a treat. It’s firmer than chicken but not as firm as beef. It comes out very tender, too.In terms of how to serve the meatballs, there are other options than the cucumber salad shown here. Try orzo with feta, pita with humus, couscous, or Greek pasta salad.
Ingredients
Meatballs
1lbground lamb
1cupseasoned breadcrumbs
1largeegg
1/4cupchopped red onions
1/4cup fresh dill, minced
1/4cupparsley, minced
Salt and pepper to taste
Feta infused yogurt
5ozwhole milk feta
1cupplain, whole milk Greek-style yogurt
3 sliced of lemon
½ cupfresh herbs dill, oregano, basil, parsley, bay, thyme
1clove garlic, minced
¼cupwhipping cream** One tablespoon of fresh herbs equals 1 teaspoon of dry herbs.
Cucumber-Dill Salad
3cups seedless cucumbers sliced thinly
4Tbsdillor more to taste
½ cupsliced red onion
2Tbs fresh squeezed lemon juice
1Tbs Extra virgin olive oil
1Tbporange blossom honey
½cupwhite vinegar
½tbscelery seed
Salt & Pepper** You can adjust the amount of honey/vinegar for personal tastes
Instructions
Preheat your oven to 425F
Line a baking sheet with parchment paper
Put all the meatball ingredients in a bowl and mix them thoroughly
Shape your meatballs into the size of a golf ball. If they seem too dry, you can add a hint of milk
Place the meatballs on the baking sheet
Cook for 16 minutes (the meatballs are brown, and the meat’s temperature is 160F)
Time to multitask. As the meatballs cook, create your yogurt. Put the ingredients for the Feta yogurt into a food processor or blender. On a medium setting, mix for about 3 minutes until smooth.
Put all the ingredients for the cucumber salad in a mixing bowl, give them a good stir, and set aside.
When your meatballs come out of the oven, put a portion of yogurt on each plate. Top the yogurt with the meatballs. Place the salad on the side.
