Crostini with Ricotta Goat Cheese Spread, Almonds, and Honey
Not only are these simple, fast, and fun to make, they also taste incredible. This is the perfect appetizer to whip up when you have forgotten that you were supposed to bring an appetizer to a party and don’t have time to cook anything.
Ingredients
- 1 loaf of French bread, roughly ¼” thick, or a bit thinner
- 2 Tbsp olive oil
- 12oz goat cheese, softened
- 12oz ricotta cheese
- 2 Tbsp fresh chives, finely sliced
- ½ tsp freshly-ground black pepper
- 40 almonds
- ¼ cup honey, for drizzling on the crostini once they are assembled
Instructions
- Preheat the oven to 375F.
- Slice your loaf of bread into thin slices.
- Gently brush each side of bread with a splash of olive oil.
- Bake the crostini at 375F for roughly 8 minutes, or until they are crisp and golden-brown.
- Allow the crostini to cool at room temperature before storing in an air-tight container for whenever you are ready to assemble.
- In a large mixing bowl, whip together the softened goat cheese with the ricotta cheese.
- Fold in the finely-sliced fresh chives until they are evenly incorporated.
- Taste, and season with freshly-ground black pepper and kosher salt.
- When you are ready to assemble and serve your crostini, place a small scoop of the ricotta goat cheese spread on each toasted slice of bread.
- Place an almond or two on top of the cheese spread.
- Drizzle each almond-topped crostini with some honey, and serve immediately.
Notes
I would suggest plating these right before you serve them, as the crostini have a tendency to get a bit soggy if they sit out for too long with the ricotta goat cheese spread on top.
You can whip a half of a stick of softened salted butter into the Ricotta Goat Cheese spread—your butter-loving friends will love you for it.
