Preheat the oven to 375F.
Slice your loaf of bread into thin slices.
Gently brush each side of bread with a splash of olive oil.
Bake the crostini at 375F for roughly 8 minutes, or until they are crisp and golden-brown.
Allow the crostini to cool at room temperature before storing in an air-tight container for whenever you are ready to assemble.
In a large mixing bowl, whip together the softened goat cheese with the ricotta cheese.
Fold in the finely-sliced fresh chives until they are evenly incorporated.
Taste, and season with freshly-ground black pepper and kosher salt.
When you are ready to assemble and serve your crostini, place a small scoop of the ricotta goat cheese spread on each toasted slice of bread.
Place an almond or two on top of the cheese spread.
Drizzle each almond-topped crostini with some honey, and serve immediately.
