Heirloom Tomato & Burrata Salad over Arugula
In this recipe, delicious heirloom tomatoes and fresh burrata cheese are served atop a mound of lightly-dressed arugula. It can serve as an entire meal, if you prepare slightly larger portions.
Ingredients
- 2 ripe heirloom tomatoes, or roughly 16oz, washed and cut into bite-sized pieces
- 1 tsp kosher salt
- 16 oz fresh burrata cheese
- ½ shallot, very finely minced
- 2 Tbsp sherry vinegar
- 1/2 tsp whole-grain mustard
- 2 tsp Dijon mustard
- 1 tsp honey
- ¼ tsp dried oregano
- 1/8 tsp sweet paprika
- 1/4 tsp red pepper flakes
- 3 Tbsp extra virgin olive oil
- Salt & freshly-ground black pepper (to taste)
- 4 fresh basil leaves
- 2 fresh mint leaves
- 4 cups Arugula, washed and dried
Instructions
- Wash and cut your heirloom tomatoes.
- Season the tomatoes with kosher salt and allow to drain in a bowl.
- Drain the storing liquid from the burrata cheese and set cheese aside for salad assembly later.
- Combine shallot, vinegar, whole-grain mustard, Dijon mustard, honey, dried oregano, sweet paprika, red pepper flakes and olive oil and allow to sit for 15 minutes.
- Season vinaigrette with salt and freshly-ground black pepper to taste.
- Finely slice the basil and mint leaves and gently wrap in a piece of paper towel and set aside.
- Prepare your Arugula lettuce and drain on paper towels.
- Toss Arugula in a large bowl with a few tablespoons of the vinaigrette, or until the leaves are lightly and evenly coated with the dressing.
- Season greens lightly with some more salt and freshly-ground black pepper.
- Drain the liquid that has been released from the heirloom tomatoes.
- Add tomatoes on top of arugula.
- Add the burrata cheese on top of the tomatoes.
- Season with salt & freshly-ground black pepper.
- Drizzle with olive oil and serve.
Notes
If you don’t enjoy the flavor or Arugula, you can substitute for another type of greens.
