Asian cucumber salads are seriously addicting! With just a few ingredients, you can have a delicious, crunchy salad in minutes. Asian cucumber salads are common in many restaurants and cafes, but they’re so easy to make at home. They’re perfect as an appetizer, snack, or even as a side dish with fish or chicken!
Ingredients
-1 large Persian or English cucumber, peeled if desired
– 1/2 teaspoon salt
-1/2 teaspoon sugar
-1 teaspoon ginger, grated
-1 clove garlic, minced
-1/4 cup rice vinegar
-1 tablespoon soy sauce
– 1 tablespoon sesame oil
-1/2 tablespoon chili paste or chili oil
-1 tablespoon sesame seeds
Directions
1. Clean and slice cucumber.
2. Place cucumber in a strainer and sprinkle with salt. Toss to evenly coat both sides with salt. Let it sit in a colander over a bowl for 10 minutes to drain some liquid. Do not rinse after!
3. In a mixing bowl, add all sauce ingredients and mix.
4. Add cucumbers and mix evenly.
5. Refrigerate until ready to serve!
