Spicy Boneless Buffalo Chicken Bites
It’s amazing how easy it is to make these spicy buffalo chicken bites at home. Store-bought boneless skinless chicken thighs make the prep easy, and the meat is wonderfully tender and forgiving in the oven. Feel free to scale the recipe up or down as you see fit.
Ingredients
- 32 oz (2 pounds) boneless, skinless, chicken thighs, cut into bite-sized chunks
- 2 tsp Kosher salt
- 1 cup all-purpose flour
- 1 tsp freshly-ground black pepper
- 1 tsp Kosher salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried granulated onion
- 1 tsp dried granulated garlic
- 1 tsp cayenne pepper
- 1 tsp paprika
- ¼ cup lager beer of choice
- ½ cup Frank’s Hot Sauce
- 6 Tbsp salted butter, melted
- ½ cup prepared Blue cheese dressing, for serving
- 4 stalks of celery, cut into 3” sections, for serving
Instructions
- Preheat the oven to 375F.
- Cut the boneless, skinless, chicken thighs into bite-sized chunks and season them all over with a light sprinkling of Kosher salt.
- In a large mixing bowl, combine the 1 cup of all-purpose flour with the dried spices.
- Add the chicken pieces to the mixing bowl with the flour dredge, and coat the chicken on all sides with the flour.
- Shake off the excess flour from the chicken pieces, and place the chicken pieces on a sheet tray covered with parchment paper.
- Bake the chicken pieces at 375F for roughly 10 minutes, or until the chicken is almost cooked through.
- While the chicken is baking, make the spicy hot sauce.
- To make the spicy buffalo sauce, add the lager beer to a small sauce pot on the stove and bring to a simmer.
- Add the Frank’s hot sauce and 6 Tbsp of salted butter and continue to cook at a low simmer for an additional two minutes, or until the alcohol has mostly cooked off from the sauce.
- Set the sauce aside for when the boneless chicken bites are partially done baking.
- When the chicken is almost cooked through, remove it from the oven.
- Place the chicken in a bowl with a small amount of the buffalo sauce you made earlier, and toss to coat the chicken pieces in the sauce.
- Return the sauced chicken pieces back to the sheet tray lined with parchment paper, and continue to bake for an additional 5-7 minutes.
- Check to the ensure that the chicken is fully cooked, and remove the cooked chicken from the oven.
- Toss the chicken bites in more of the spicy buffalo sauce before serving.
- Serve the chicken bites hot, with more spicy buffalo sauce, blue cheese dressing, and celery sticks on the side.
Notes
These are best eaten when the chicken is right out of the oven and re-sauced.
