This garlic soup is delicate, flavorful, and incredibly easy to prepare. This soup is intentionally served at room temperature or slightly warmed, poured in bowls over a slice of toasted bread that has been drizzled with olive oil.
Ingredients
- 1.5 cups water
- 1 tsp salt
- 4-8 garlic cloves
- 1 Bay leaf
- 2 Thyme sprigs
- 1 egg yolk
Instructions
- Boil the water, salt, garlic cloves, bay leaf, and thyme sprigs for 30 minutes, or until the whole garlic cloves are tender.
- Remove the bay leaf and thyme sprigs from the soup and allow soup to begin to cool down.
- Remove ¼ cup of the liquid and set aside to cool.
- When the soup has cooled closer to room temperature, blend the ¼ cup of broth with the garlic cloves and the egg yolk.
- Whisk this mixture back into your cooled soup, and serve on top of crusty bread drizzled with olive oil.
