Ingredients

fresh tomatoes, chopped

can
black-eyed peas, drained

sweet onion, chopped

clove
garlic, minced
One half cup
olive oil
One third cup
red wine vinegar
One half cup
fresh cilantro, chopped
Salt and pepper to taste
Instructions
Combine all ingredients in a large bowl and chill for several hours before serving with tortilla chips
If you wish, you may also serve with the main course
