Both my parents worked when I was growing up, and my mother still manages to include hearty serving of vegetables and a simple fresh salad with most of our weekday meals. One of the staple vegetables was a simple dish consisting of boiled peeled carrots, finished with a honey butter glaze. They are simple, sweet, buttery, and incredible.
