Fool's Gold-Inspired Sandwich (PB&J with Bacon & Banana)
When I first read about the famous Fool’s Gold sandwich that was admired by Elvis, I was completely captivated by the idea. The original classic loved by Elvis was an absolute monster of a sandwich—It included an entire loaf of bread, which was partially hollowed out and filled with a jar of peanut butter, a jar of grape jelly, and 16 ounces of fried bacon. It is estimated to clock in at roughly 8000 calories, which is a little bit crazy for a sandwich, even if you are sharing it with a few other people. My version of this recipe described below is smaller, and more manageable to eat, with many of the same flavors as the original. I have included some cream cheese and banana to the sandwich, both of which are optional.The recipe below is for 2 sandwiches.
Ingredients
2hoagie-style soft rollscut in half
3 Tbsp salted buttersoftened
2 Tbsp cream cheesesoftened
7 Tbsp raspberry jam
6 Tbsp peanut butter
8 slices of baconcooked in a skillet to crispy and drained on paper towels
1 ripe bananacut into ¼” slices
Instructions
Butter the rolls on the insides and toast in the oven until very lightly golden, but still soft.
Remove rolls from the oven and gently spread on a thin layer of cream cheese to each roll.
Add the raspberry jam and peanut butter, adjusting your quantities based on your desired PB-to-J ratio.
Add the fried bacon and ripe banana and enjoy.
Notes
The original recipe apparently used grape jelly. I have decided to use raspberry jam here instead.
